Preservation

For best results store these confections in an airtight container placed in a cool, dry environment (approximately 70 deg F). We recommend that they be enjoyed within one month of purchase.

Tasting

The flavor subtleties of each confection are best when tasted at room temperature (approximately 70 deg F). To fully experience each confection’s character and bouquet, we recommend pairing with still spring water.

Cacao Percentages

What does “% cacao” (e.g. 38%, 63%, 72%, 99%) mean? This measurement indicates how sweet a chocolate is. Lower percentages mean sweeter chocolate. For example, 38% refers to a milk chocolate, 63% and 72% to a bittersweet, and 99% to an unsweetened chocolate. Technically, “% cacao” refers to the amount, by weight, of cacao bean plus cocoa butter in chocolate. The remaining weight is sugar, soya lecithin and pure vanilla.
