The Vermont Chocolate School

When I made the decision to teach chocolate making I wanted to do things my way. That means small classes where I only teach one or two students per class. I cherish the idea of giving my students almost exclusive attention. These small classes also enable me to custom tailor my teaching to each student.

I will teach you the most important aspects of chocolate making. The classes are "hands on". You, the student, will make everything yourself with my supervision.

Mastering chocolate making is not easy, that's why there are so few chocolatiers who make it by hand. You will develop the instincts to know at a glance or feel if the chocolate is in temper. While machinery is a great help, you still have to develop these instincts and skills as machinery isn't always reliable. The only way to master these techniques is by practice, practice, practice. You will gain both invaluable knowledge and assistance from me which is not available anywhere else.

The skills you will learn are adaptable to the home kitchen. With just a microwave oven, chocolate, a chocolate thermometer and a few tools you too can become a master chocolatier.

BEGINNER CLASSES

The class will begin with an overview of chocolate moving on to chocolate tempering by hand using a microwave. You will make chocolate bark with a variety of inclusions that each person can select (almonds, dried cherries, peppermint crunch.) You will also dip pretzels, Graham crackers, fresh fruit, nut clusters, and whatever else we feel like making, while keeping the chocolate in temper as we go. You will take home everything you make, so it's advisable to bring a cooler with ice packs if possible.

Cost per person for the beginner class is $275.00 based on no more than 2 students.

ADVANCED CLASSES

This class is for people who are already familiar with the basics of chocolate tempering. We will cover truffles and their flavorings as well as both solid and filled molded chocolates. Not all truffles are created equal. A truly superb chocolate truffle should be neither gooey nor grainy. There is an art to achieving the perfect consistency that comes with years of knowledge and practice. The class will probably take about 4 hours give or take, including questions and some fun and laughter, otherwise, what's the point!!! Cost will include ingredients and each student will take home what they make, unless they can't resist eating it right away.

Cost per person for the advanced class will be $350.00 based on no more than 2 students.

TAKE BOTH BEGINNERS AND ADVANCED CLASSES

A discount is offered if you take both the beginner and advanced class on Friday and Saturday. Cost $600.

You will also be able to purchase bulk chocolate to take home with you as well as some small utensils and packaging.

Classes will be held on Fridays and Saturdays 9:00 a.m. sharp.

Classes will run January through October.
